7/26 (Tues) Méxican Cooking Demonstration with Héctor Guerrero from Chuparrosa 5:00-8:30PM
Chuparrosa was born from our love of the spirit of Mexico, passion for food, freedom of travel, simple living, the beauty and tradition of hand craft and artisanal practices, and the desire to connect people and create community. Héctor is a self taught chef from México City where he grew up cooking with his family from a young age.
When Héctor moved to Portland a decade ago he wanted to share his culture and passion for Mexican cuisine. He creates community here through sharing his knowledge and inspiration of Mexican food, therefore preserving these rituals and traditions. He creates cultural events for his community incorporating local art, music and cultural celebrations.
In this demonstration Héctor explains the nixtamal process- (the prehispanic process of making corn masa) In his class you will be using the local organic 3 sisters nixtamal (masa). We will use the masa to make traditional tortillas, sopes, etc.
We will be cooking:
Homemade chorizo (beef), and we will provide a vegan option as well.
Vegetables from Mesoamerica, such as chayote, tomatillos, nopales (cactus) verdolagas, epazote, calabaza, jicama & chiles such as guajillo, morita, etc
Adobo sauce- a traditional Mexican sauce.
Salsa Verde de Molcajete- roasted tomatillo salsa
*entire menu is gluten free
At the end we will sit down to enjoy the fruits of our labor together!
